FLOUR-LESS Almond Butter Chocolate Chip Cookies [no flour; dairy-free, low-sugar]

Adapted from a Clean Eatingmagazine recipe [Makes 24 cookies]
     **Their readers REALLY wrote in about THIS one, saying these were incredible.  We agree totally!

1 cup almond butter, stirred well
¾ cup organic Sucanat
1 large pastured poultry egg [LOCAL!]
½ tsp. baking soda
dash sea salt
3 oz. dark chocolate chips or pieces– try one of The Well's dark chocolate bars, cut in small pieces

Preheat oven to 350 degrees.

In a medium bowl, stir together first 5 ingredients until blended. Stir in chocolate.
Drop dough by rounded tablespoonsfuls onto parchment-lined baking sheets. [I lightly sprayed a baking sheet; it did fine.]
Bake for 8 - 10 minutes or until lightly browned. Let cool on baking sheets for 5 minutes. Remove to a wire rack and let cool for 15 more minutes. [Linda: It was almost unbearable to wait, they smelled SO good.  And, they WERE that good!]

Nutritional content per cookie: calories, 110; fat, 8g; crbs, 10g; fiber, 1g; sugars, 3g; protein, 2g; sodium, 55g.
