Coconut Date Balls
Adapted from Stop Aging Now newsletter, recipe by Gale Maleskey, MS, RD

This healthy treat includes dates which are naturally sweet, and also contain trace minerals and fiber. Coconut, walnuts and flaxseed are all good sources of healthy fats. A perfect, quick, energy snack.

Ingredients [underlined items available at The Well]
2 cups organic dried dates, pitted
1 cup raw walnuts
1/2 cup organic flax seed meal
1/2 cup organic shredded or flaked coconut

1. Grind the walnuts in a food processor until finely chopped.
2. Add the dates and the flax meal and process until the mixture forms a ball.
3. Roll into walnut-sized balls. As you form the balls, press some coconut flakes into the surface.
Note: If the mixture is dry, you can add some water, juice, or honey until it’s moist enough to hold together. This recipe is also good with apricots and almonds. The balls also freeze well.

Makes about 35 walnut-sized balls.

Nutritional Information per Serving (one walnut-sized ball): 76 calories, 2.2 g protein, 9.8 g carbohydrates, 4 g fat (.4 g saturated), 0 mg cholesterol, 2.5 g fiber, 0 mg sodium.
